You probably do dream correctly.There are several types of dreams. Lucid dreaming is simply a place where your conscious and sub-concious self meet.

I have no idea where you got most of this information (horror movies, most likely), but most of it is wrong.
I rarely see clock in my dreams, but when I do, the time doesn't jump around. The same with text: I've read books and newspapers in my dreams, with no weird changing of text. And I don't recall ever seeing a light switch.
The problem with these "reality checks" is that they need to be applied while you are dreaming. Which means you need to be aware that you are dreaming before they can be applied. The instructions say to perform one of these tests when something strange happens. The problem with this is that strange things rarely happen in real life, and everything that happens within the scope of a dream is normal within that context.
The simplest way to invoke lucid dreaming is to affix signs reading "I AM DREAMING" in various places around your house and in your car. After a time, they may start to appear in your dreams. When you see one of these signs in a place where it shouldn't exist, you now know you are dreaming.
The outside-in method is another good way to induce lucid dreams, especially if you are plagued by nightmares. (This is also something you should teach your children when they have bad dreams.) When you wake up suddenly from a nightmare, try to remember as much as possible of the dream. Focus on what frightened you, and think of ways you could turn the story around so that you can defeat whatever frightened you. Then lay back, close your eyes, and imagine that scenario. Consciously step through whatever is required to turn the nightmare to your advantage. Once you've done this enough while awake, your nightmares will no longer frighten you; you'll simply take them over.
Writing down your dreams is a good idea, but has little to do with lucid dreaming. What it does is improve your short-term memory.

I keep a dream journal on my PC using the notepad program. I have lucid dreams frequently. What's weirder is that that I have lucid half sleep dreams. Those are really weird.
The other night I dreamed that I was in a warehouse party were everyone turned out to be vampires and some were werewolves. Then As I fled, I discovered I had spider man powers so I was shooting webs and spidermanning through the rafters trying to elude my predators. I had awesome dexterity, running along 1 inch wide beams swinging everywhere I wanted to go. At one point, I was given a powerful staff which emitted a bright blue beam which destroyed the weaker undead but then a powerful shadow came after me which was to powerful for my godly staff of might.
Then a ridiculously buffed skinhead Thor charged into the fray with his hammer and started really messing things up. That was my chance to escape. I made my way out and by then it was daylight and the evil had gone with the night. The partiers were all filing out and everyone was totally wasted of drugs. Apparently I was groggy too but that when I started seeing all sorts of friends and coworkers from my past. They were all e-tarded and useless.
We went to a diner but one friend of mine was totally loc'ed out. We sat a table that hadn't been cleared yet and he started eating the food off the plates that were already there. I pulled him off and he couldn't stop telling everyone how plowed he was so I took him outside. I told him to cool it and maintain but he was totally mind screwed and stupid. Then I was offered a ride home from the rest of the idiots I came with. I told them I wouldn't ride with them because I had just survived a vampire/werewolf attack for 6 hours and wasn't about to die because my friends were dumbasses so they left me there.
I'm pretty sure I spider manned my way home after getting a pack of Red Bull chewing gum from a local gas station that was run by a David Lee Roth.
Anyway the point, write your dreams down.

The text thing works for me in my dreams, though for me any letters at all will do. Even if it's a written note or a message smeared in blood on a bed sheet.
I've not tried the clock or the back of the hands thing, when I accidentally lucid dream I usually have been confused by something I saw in the dream and then manage to seize control. Do not try to do too much too soon while lucid dreaming or you'll think yourself awake, you have to build your control of the dream up gradually.
I've found that I can enter a dream in a lucid state if I control my descent into sleep (yes, this is possible- for me anyway, I don't know about anyone else).
How *I* am able to do it:
1. I start by getting into a position where I'll be comfortable for a long period of time. Then, I start slowing my breathing down, it may take a little bit to get the hang of this, as your body may be like "WHOA HEY! I NEED THAT OXYGEN!" so you'll want to do it gradually.
2. When I was young I discovered that sometimes, just before I'd fall asleep I'd start thinking that I was hearing people talking. I would try to focus on what they were saying, but I found that if I did that I started putting words there consciously which made the voices fade. So I listened without trying to make out what they were saying.
Because of this- no matter how awake I a- if I try to hear a voice that isn't there, I will eventually start getting fragments of sound. I do NOT focus on these or they'll disappear. I can't really explain how I do it, but I essentially listen for a voice that isn't there, and my brain fills it in. You might have better luck if you try having something that is constantly producing sound nearby.
3. This is at the point where it starts to get tricky. This step can be switched with step two if you wish, though I have better luck in this order. I will try and see things with my brain as opposed to my eyes. You know, like imagining something. When your eyes are closed and your breathing is slow- if you start imagining things vividly enough you will start to get flashes of images, or at least- I do.
4. The hardest part is here. You have to maintain awareness without exercising any form of control. If you try to control things too early, you'll think your way out of the sleep. I had to learn this part through trial and error. If you can achieve this, you can begin to lucid dream.
5. In only one case so far have I been able to purposefully tell people what I was dreaming while I was dreaming it. In the morning, they asked me to never do that again.
Some helpful advice for those who want to dream about something specific:
-Hold something in your mind as you're starting to slip into sleep (whether controlled or uncontrolled). Whether it's wanting to fuck the daylights out of Salma Hayek or push a boulder on to your neighbor's truck with the shitty muffler.
-If you want to fly in a dream, start jumping forward and see how far you go. For me (and one other person I've talked to about it) I soon discover that I can glide a bit when I jump, so I try to glide a little further, and then a little further- and pretty soon I actually get enough lift to get airborne. For some reason I can never actually escape the planet's atmosphere when I fly. I've heard that spinning quickly in your dreams will help you stay in the dream, but I have not tested this out.
I almost always remember some portion of my dream when I wake up- and if I focus on it, I get more of the details- but if I don't make a conscious effort to recall it I usually lose it.

Last night was good.
My neighborhood was flooded and I ended up adopting a white shark that was trapped in front of the house when the water receded. It was surviving in about 1-2 feet of water and we'd feed it leftovers but I started to feel bad for it. We discovered it was kept as a pet by a previous owner and was abused. My family and I took care of it for a while, but there wasn't enough water left for it to have a good life. Occasionally the flood waters would come back and the shark was happy but it didn't last. Once in a while a boat would come by with a water skier behind it but we had to wave them off because there was a shark in the water. I suggested we rent a portable tank and cart it out to the ocean. Dad wasn't big on the idea. He just wanted to shoot it and call it a day.
